My personal journey with cooking is one full of international flavor. A multi-cultural family and lots of travel means I love food from all over the world. Cooking became a serious sport for me when my health took a scary turn in 2016 when I was diagnosed with a genetic kidney disorder, PKD.
Poly-cystic kidney disease is an illness of inflammation. After going back and forth with doctors for over a year, and finally getting a diagnosis, I took charge of my health through nutrition. I took a deep dive into scientific research about the body and how it likes to exist. Alkaline environments prevent disease. Nurturing the good bacteria in your gut will completely transform your health. Cutting out processed foods, dairy, and meat can help reduce inflammation, even if done temporarily.
When I first got diagnosed, I went vegan for 6 months. In that time my body naturally reduced all the inflammation and pain I was experiencing. I dropped 30lbs without even noticing. My skin was clear and I had more focus. Everything about your experience in this world starts with your nutrition. Think of yourself as a complicated house plant- you need lots of water, sunshine, and nutrients every day. Alongside exercise and meditation, plant-based nutrition is a powerful way to transform and heal the body.
The doctors told me it was irreversible. No cure. My kidneys were polka-dotted like dalmatian puppies and enlarged. Through plant-based nutrition and home cooking, I was able to SHRINK each kidney by one centimeter! That was a few years ago, and my health has only continued to improve the more I cook at home. This is why I am so passionate about creating a cook book. It is through these recipes, that I was able to ween myself off of fast-foods, restaurant foods, and anything prepared that had too much sodium or chemicals. I learned to make my own Chinese takeout, with all fresh ingredients. My own Indian food, pizza, and burgers. All the junk that you crave that you know is actually really bad for you. Imagine replacing it all with your own recipes, the food being 10x better! When you cook the food with fresh ingredients and love, it just hits different.
